Chicken Piccata with Zoodles

- 200 g Zucchini (spiralized)

Method
- Pound the chicken thin, season and sear until golden; set aside.
- Deglaze with lemon, capers, garlic and a splash of water; swirl in the butter.
- Warm the zoodles, top with the chicken and lemon-caper sauce, and finish with parmesan.

Fridge: keeps 3–4 days in an airtight container — reheat gently. Most portions freeze well for up to 2 months; thaw overnight.
