Ingredients
- 4 Large eggs
- 150 g Liquid egg whites
- 90 g Lean cooking chorizo
- 30 g Manchego or cheddar
- 80 g Red pepper & onion
- Smoked paprika & parsley, to taste

Method
- Crisp the sliced chorizo in a dry pan, then add diced pepper and onion and soften.
- Pour in the whisked eggs and egg whites; stir gently to soft scramble.
- Fold through the cheese, scatter with parsley and serve in a bowl.

Best assembled fresh. Prep the components up to 2 days ahead, keep chilled, and combine just before eating.
