Ingredients

  • 4 Large eggs
  • 150 g Liquid egg whites
  • 90 g Lean cooking chorizo
  • 30 g Manchego or cheddar
  • 80 g Red pepper & onion
  • Smoked paprika & parsley, to taste

Method

  1. Crisp the sliced chorizo in a dry pan, then add diced pepper and onion and soften.
  2. Pour in the whisked eggs and egg whites; stir gently to soft scramble.
  3. Fold through the cheese, scatter with parsley and serve in a bowl.
