Ingredients

  • 270 g Pork tenderloin
  • 150 g Green beans
  • 1 tbsp Dijon mustard
  • 1 tbsp Olive oil
  • Garlic, rosemary, salt, pepper, to taste

Method

  1. Heat oven to 200C/400F. Rub the tenderloin with mustard, garlic, rosemary and salt.
  2. Sear in an oven-safe pan to brown all sides, then roast 12-15 min to 63C/145F; rest.
  3. Toss green beans in olive oil and roast or steam until tender. Slice the pork and serve.
